A Fumé Blanc refers to a dry Sauvignon Blanc with some French oak influence in the wine. Originating from the Bordeaux region of France, Sauvignon Blanc is a green-skinned grape, white wine variety which has gained a popular following here in Australia. Victoria's cool regions produce clean, vibrant Sauvignon Blancs, with those in the Yarra Valley region producing a fullness and tropical fruit centre.
Tasting Notes
With the oak providing generous amounts of texture, the wine has lifted notes of spiced fruits. On the palate, it’s creamy and layered with vibrancy and crunch, weight and complexity. length. 13%. Hand-picked Upper Yarra Sauvignon Blanc, whole cluster pressed directly to 10% new Oak and 90% oak for wild fermentation and further maturation for 9 months.

"From a 25-year-old sauvignon blanc vineyard in Gembrook. A natural-yeast ferment in both new (10%) and older barrels, then matured nine months. A bright straw green-gold. Bursting from the glass with its aromas of ripe tropical fruits, greengages and some attractive herbal notes. Dry, chalky and long, this really is a lovely example of the style."
