
Over in France's Champagne region, the varietal "Blanc de Blancs" indicates a Champagne created entirely from Chardonnay fruit. With the name literally meaning: "White from White", so, it makes sense then that we use our famous Yarra Valley Chardonnay grapes to produce a world-class Blanc de Blancs!
Tasting Notes
Fine lifted aromas are delicately reminiscent of citrus fruits and spiced biscuity complexity. An intricately wound layering of lemons and limes with hints of fresh linen and honeysuckle elevate the aroma whilst the palate is full of vibrant primary fruits, and grapefruit freshness accompanied by creamy notes and a structured backbone of acidity and texture. A beautiful wine with depth, balance and purity.
Meal Pairing Suggestions
Pairs well with lighter fare like oysters, sashimi, and grilled shrimp, as well as richer dishes like lobster rolls or dishes with creamy sauces. Its crisp, zesty profile also makes it a great match for fried foods such as fish and chips or tempura vegetables, and it works beautifully as an aperitif with snacks like blinis.
