A Fumé Blanc refers to a dry Sauvignon Blanc with some French oak influence in the wine. Originating from the Bordeaux region of France, Sauvignon Blanc is a green-skinned grape, white wine variety which has gained a popular following here in Australia. Victoria's cool regions produce clean, vibrant Sauvignon Blancs, with those in the Yarra Valley region producing a fullness and tropical fruit centre.
Winemaking Notes
Selectively hand-harvested Sauvignon blanc from the Upper Yarra Valley. Gently whole bunch pressed with a combination of high solids and cold settled juice. High solids portion was wild fermented in new French oak whilst the cold settled juice was inoculated and fermented in older oak. Lees stirred regularly to increase complexity and add texture, lightly fined with vegan-friendly agents before bottling.
Tasting Notes
Pristine light straw green in colour, this wine offers subtle hints to the varietal but fulfils with a combination of feijoa, limes, lemongrass and delicate and intricately woven oak spice. The palate is complex and driven with a creamy complex mid palate that culminates in a vibrant crunch of acidity to finish.
