This wine is lovingly dedicated to Charles' late sister Vanessa, whose name in Greek means "butterfly". Vanessa enjoyed her heavy red wines, especially a good Cabernet Sauvignon.
Cabernet Sauvignon grapes (Clone SA 125) were hand-picked in one batch from a select 20 rows at the Dixon’s Creek Vineyard premium Cabernet Block. They were then destemmed and cold soaked before fermenting over twelve days, then closed lid and left on skins for an extended 30 days of maceration for structure and length. The wine was pressed off into French barrique 50% New, 50% one-year-old, and matured in barrel for 22 months. 13.5%
Tasting Notes
Dense dark red-purple in colour, this wine offers intense aromas of violets, satsuma plums and tobacco leaf.
The palate is packed full of wild blackberries, cedary biscuity oak and elegant cool climate white pepper. Upright chalky varietal tannins engulf the full-bodied nature of this wine, giving it both structural integrity and layers of flavour. A long persistent concentration lingers the length of the palate ensuring pure and unashamed satisfaction.
