A Fumé Blanc refers to a dry Sauvignon Blanc with some French oak influence in the wine. Originating from the Bordeaux region of France, Sauvignon Blanc is a green-skinned grape, white wine variety which has gained a popular following here in Australia. Victoria's cool regions produce clean, vibrant Sauvignon Blancs, with those in the Yarra Valley region producing a fullness and tropical fruit centre.

Tasting Notes
Hand-picked Upper Yarra Sauvignon Blanc, whole cluster pressed directly to old oak for wild fermentation and further maturation for 9 months. The oak influence is largely textural and the resultant wine is brightly varietal, yet generously coating on the palate.
Vanilla, coconut and candied banana with lemon curd and biscuit. Poached apple and pink grapefruit lead to lemonade with hints of sherbet. Soft citrus and saline characteristics. Silken mouthfeel with a smooth vanillin length

"From a 25yo Savignon Blanc vineyard at Gembrook. A natural-yeast ferment in older barrels, then matured 9 months in the same barrels. A bright green gold, there's no mistaking the variety, with its aromas of quince and kiwifruit together with some freshly cut grass and snow pea tendrils. Mouth-filling and textured, this has plenty of flavour and the acidity is bright enough to keep the wine nicely balanced."
