Tasting notes:
Pear skin, crisp apple, flint and petrichor. Hints of orange rind and pink grapefruit with underlying cinnamon spice and cashew nut profile.
Good fruit intensity of nashi pear, grapefruit and tangerine is carried by a racy line of acidity. Kafir and lime citrus notes lead to a savoury finish.
Winemaking:
Hand-picked, whole cluster pressed, 25% fermented ‘wild’ in old French barriques. 75% fermented cold and slowly in stainless. The wine is made with the intention of creating a brightly aromatic style with complex, textural and savoury interest on the palate. 13.3% Alc/Vol
