One of the most popular red wine grape varieties in the world, Cabernet Sauvignon gained global attention and interest due to its favoured position in Bordeaux, France, where it's commonly blended with Merlot and Cabernet Franc varieties.
Suited to warmer climates, this varietal thrives across the "floor" of the Yarra Valley where it is considerably warmer - especially where Mandala Wines Dixon's Creek site is located.
Tasting Notes
Rich cassis and lifted violet aromas lead into spiced clove, mocha, and cedary oak. Blackcurrant and blueberry flavours give way to savoury notes of black olive, coffee, and dark cocoa. Medium-bodied with fine tannins, delivering a long length and a persistent finish.
18 months in French oak. Cellaring potential of 5-8 years 13.5% Alc/Vol.

"Blackcurrant and red berries, a little cocoa, appropriate leafy and tobacco notes, some perfume. Medium-bodied, good crunch, and freshness, light grip to chalky tannin, currants, and ripe raspberry, with a crisp and firm finish of good length. Nicely done. Drinks very well. Has charm, too."

This has been extracted with precision and early to mid-term drinking in mind, without sacrificing flavour or the integrity of cabernet's inherent graphite tannic strictures. There is a dollop of Merlot (11%) and franc (4%) for fill and lift respectively. 18 months in quality oak. Delicious. Currant and berry fruit. Hedgerow tannins, gently guiding. This is gorgeous Yarra cabernet."
